Gluten Free Banana Bread Recipe

We finally perfected it! Okay, by “we” I mean my wife made it and I tried it and said “That’s perfect!”We put together a gluten-free banana bread that tastes awesome and nails the texture of the real thing.

Keep in mind, it’s really good and a bit on the addictive side. This recipe is for a whole loaf, not one serving. The entire loaf is 1200 calories and it’s important that I say that gluten-free does not mean you can eat unlimited amounts without consequence.
Use this recipe in Phase 1 of 4 Day Fat Loss as a dessert for the FBSM or in Phase 3 on the day before the fast.
Here’s the recipe:
Gluten Free Banana Chocolate Chip Bread
Ingredients
  • ½ cup almond flour
  • ¼ cup buck wheat flour
  • 2 eggs
  • 3 over ripe bananas
  • 1 tsp. vanilla
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • ¼ cup melted butter
  • 2 tsp. cinammon
  • ½ tsp. nutmeg
  • 30 grams 90% chocolate bar broken into chunks
  • Stevia (enough for desired sweetness)
Instructions
  1. Preheat the oven to 350°.
  2. In a medium bowl, mix the flour, salt, cinnamon, nutmeg and baking soda.
  3. In another bowl, beat the eggs, melted butter, vanilla, and smashed banana.
  4. Pour the wet ingredients over the dry and blend.
  5. Fold in the chocolate.
  6. Pour into a greased loaf pan.
  7. Bake for 45-60 minutes or until a toothpick comes out clean.
