We finally perfected it! Okay, by “we” I mean my wife made it and I tried it and said “That’s perfect!”We put together a gluten-free banana bread that tastes awesome and nails the texture of the real thing.

Keep in mind, it’s really good and a bit on the addictive side. This recipe is for a whole loaf, not one serving. The entire loaf is 1200 calories and it’s important that I say that gluten-free does not mean you can eat unlimited amounts without consequence.
Use this recipe in Phase 1 of 4 Day Fat Loss as a dessert for the FBSM or in Phase 3 on the day before the fast.
Here’s the recipe:
Gluten Free Banana Chocolate Chip Bread
Ingredients
- ½ cup almond flour
- ¼ cup buck wheat flour
- 2 eggs
- 3 over ripe bananas
- 1 tsp. vanilla
- ½ teaspoon salt
- 1 teaspoon baking soda
- ¼ cup melted butter
- 2 tsp. cinammon
- ½ tsp. nutmeg
- 30 grams 90% chocolate bar broken into chunks
- Stevia (enough for desired sweetness)
Instructions
- Preheat the oven to 350°.
- In a medium bowl, mix the flour, salt, cinnamon, nutmeg and baking soda.
- In another bowl, beat the eggs, melted butter, vanilla, and smashed banana.
- Pour the wet ingredients over the dry and blend.
- Fold in the chocolate.
- Pour into a greased loaf pan.
- Bake for 45-60 minutes or until a toothpick comes out clean.
